Step Into Soho’s Hidden Agave Den: El Siete

We’ve raved about El Pastor Soho before, but its late-night cocktail bar, El Siete, tucked beneath the restaurant, officially reopened last month and after sampling a tequila cocktail or two, we can confirm it’s firmly back at the heart of Soho’s late-night scene.

Designed in collaboration with interiors studio Macaulay Sinclair – the team behind some of London’s most famous restaurants like Hawksmoor, Dishoom, and Flat Iron, the space takes its cues from Mexico City’s modernist architecture. Expect a palette of soft pink walls, chrome detailing, intricate metalwork, and volcanic-stone accents. The central island bar is designed for ultimate guest comfort, featuring a terrazzo top and a tactile leather trim perfect for leaning into the evening. Nearby, marble coffee tables are dotted with glowing glass lanterns, setting a sophisticated date-night vibe.

One of the best details? Guests don’t enter through the main restaurant. Instead, you gain access via a discreet, unbranded pink door on Brewer Street.

The cocktail programme is a major collaboration worth shouting about, led by Giles Looker and Michael Butt of Soulshakers (the minds behind Glastonbury’s San Remo bar). The menu revolves around the number seven: seven margaritas, seven agave-themed cocktails, and seven playful twists on classics.

Standouts include the 777 Margarita – a classic served in a stainless-steel flask to keep it ice-cold, just like they do in Mexico. You can even purchase the flask for £15, perfect for up-and-coming picnic season. For a true taste of summer, the Cantalupo is a frozen melon margarita served inside a whole cantaloupe. Spicy tequila fans should head straight for the Trio of Spicy Margaritas, where heat levels are signposted by their traffic-light colours. If you prefer your agave spirits on the rocks, there are over 60 to choose from, including El Pastor’s own limited-edition Batch 005 mezcal.

Feeling peckish? Chile de árbol popcorn arrives as standard with cocktails, alongside a curated menu of guacamole and totopos to graze on, plus seven mini tostadas to order. These are crafted from El Pastor’s renowned heirloom corn tortillas; highlights include the Jerusalem artichoke with tomato-orange salsa – a waiter recommendation that did not disappoint, alongside the classic Al Pastor pork and the Adobo Negro chicken with mango and habanero. To finish, there is a sweet version topped with caramelised banana, dulce de leche, and orange Chantilly.

Music is a core pillar of the experience. Latin-themed playlists have been developed with Playlister, featuring monthly guest mixes and an opening month residency by London-born DJ Tommy Gold.
