This autumn, Crosta Mollica introduces Collezione Romana, a new range of 32cm wood-fired sourdough pizzas that redefines what a frozen pizza can be. Hand-crafted in Italy and slow-proved for 24 hours, each pizza emerges from the oven with a crispness that sings, a depth of flavour that lingers, and an authenticity that transports you straight to the cobbled streets, sunlit coasts and forested hillsides of Italy. These are pizzas with soul—crispy, golden, and impossibly delicious, offering a complexity and richness utterly unlike any frozen pizza you’ve ever tasted before.

Cut through the cornicione and you’ll find that feather-light crunch giving way to airy softness; bite into a slice and the flavours bloom in layers—smoke from the wood-fired oven, sweetness from carefully sourced tomatoes, creaminess from buffalo mozzarella, aromatic herbs gathered from Italy’s storied landscapes. This is the true taste of Italy, beautifully preserved, ready to be enjoyed at home.

True to Crosta Mollica’s Non Per Tutti ethos—not for everyone, but for those who know real pizza—each recipe celebrates an iconic Italian region, crafted on a classic Romana base: thin, crisp, elegantly blistered.

THE COLLECTION

PORTOFINO

Inspired by the postcard-perfect harbour town of Portofino, this refined reimagining of a Margherita classica captures the elegance of the Italian Riviera. Slow-roasted pomodorini gialli bring mellow sunshine sweetness; mozzarella di bufala melts delicately over the thin, crisp base; a vivid basil salsa drizzled on top evokes warm summer evenings by the Ligurian sea.

Pairing Perfetto: A crisp, citrus-kissed Vermentino, with gentle mineral notes that cut beautifully through the soft mozzarella and balance the tomatoes’ natural acidity.

BOLZANO

Drawing inspiration from the Alpine city of Bolzano, this pizza channels the hearty flavours of the Dolomites. Think rich salsiccia sausage, sweet-savoury balsamic red onions, aromatic rosemary—warming, bold, and evocative of mountain lodges and cool northern evenings.

Pairing Perfetto: A chilled Montepulciano, fruity yet structured, its peppery edge echoing the pomodoro and pairing elegantly with the depth of the salsiccia.

BOSCO DI ALBA

A love letter to the truffle-rich woodland of Piedmont, Bosco di Alba is rustic luxury in edible form. Fragrant summer truffles meet wood-fired grilled mushrooms, all brought together with a luscious roasted garlic crema. The result: earthy, velvety, utterly intoxicating flavours that honour Piedmont’s truffle traditions.

Pairing Perfetto: A Barbera from Piedmont, offering cherry-bright notes and earthy undertones that complement the funghi and affirm the region’s culinary heritage.
