During my stay, reaching my room meant passing through what felt like a curated exhibition, an almost maze like series of corridors where artwork and lighting worked together to slow your pace. The rooms strike a careful balance between style and true comfort. Spacious and filled with natural light, they are designed as places to retreat rather than simply sleep. Dining is approached with the same level of intention, offering two distinct experiences that complement one another. At Saba, the menu takes a more unexpected direction. Mediterranean ingredients are reimagined through Asian techniques, resulting in dishes that feel both creative and grounded. Sitting at the bar, watching the chefs at work adds another layer to the experience. There is a quiet precision to it, a sense of craft that makes each plate feel considered. The nigiri selection is exceptional, and the black cod stands out in particular, rich, delicate, and perfectly executed. In contrast, the Mediterranean offering leans into simplicity. Here, the focus is on quality ingredients, treated with restraint. It is unfussy, confident cooking, the kind that does not need embellishment. A perfectly cooked steak became one of the most memorable dishes of the stay, while smaller touches such as fresh bread, local olives, and beautifully presented desserts rounded everything out with ease.

Wellbeing is central to the Kimpton Aysla experience, but it is delivered with a refreshing sense of flexibility. Rather than prescribing a routine, the hotel offers a range of classes and activities that allow you to shape your own rhythm, whether that means movement, stillness, or a balance of both. The spa itself spans two floors dedicated entirely to switching off. It is expansive without feeling overwhelming, with spaces that flow naturally into one another. An indoor pool sits alongside a vitality pool, complemented by a sauna, steam room and even a salt cave. There is a sense that you can spend hours here, moving slowly from one experience to the next.
Treatments feel equally considered. A bespoke facial was followed by a myCODAGE consultation and a complimentary custom serum, created specifically for my skin. The process is inspired by a more scientific approach to skincare, blending targeted active ingredients that work in synergy to address individual needs. Each element is carefully selected and combined to form a personalised formula, making the experience feel both precise and deeply tailored. The treatment rooms are quiet and cocooning, designed for complete relaxation, while the overall space encourages you to linger.

While it is easy to stay within the calm of the resort, Kimpton Aysla also makes it effortless to explore beyond it. The hotel offers bikes, which became one of the most enjoyable ways to experience the local area. Cycling through Santa Ponça and the surrounding landscapes adds another layer to the stay, allowing you to take in the island at a slower, more immersive pace.
For something further afield, day trips can be arranged, including visits to local wineries such as Finca Biniagual. It is a chance to step into another side of Mallorca, where the focus shifts to local produce, craftsmanship, and the island’s rich winemaking heritage.
What lingers most about Kimpton Aysla Mallorca is not a single standout feature, but the feeling it leaves behind. It is found in the transitions, the walk to breakfast, the shift in light as evening falls, the scent that follows you through the gardens. The details you do not immediately notice, but that stay with you long after you leave.
