Tom Brown Returns to Knightsbridge with a Bold New Seafood Venture

London’s best seafood chef Tom Brown has opened his new flagship restaurant, Tom Brown at The Capital, marking a bold new chapter in the heart of Knightsbridge.

This exciting opening sees Tom return to the prestigious Capital Hotel, where he first made a name for himself as Head Chef at the Michelin-starred Outlaw’s. Now at the helm of his own venture, the intimate 28-cover restaurant will showcase Tom’s signature style—clean, creative, flavour-led dishes with a strong emphasis on sustainable seafood.

At the core of the restaurant’s philosophy is a deep respect for the ocean. Tom is dedicated to using responsibly sourced seafood and minimising waste through inventive use of the whole catch—from lesser-known cuts to unexpected flavour pairings. The seasonally evolving tasting menus highlight his bold creativity and commitment to sustainability.

Dinner menus begin at £125 for 12 courses, featuring dishes such as:

  • Mussel, port, and beetroot charcuterie with oyster
  • Wild bass with buttermilk and vanilla
  • Tuna with soy and quail egg
  • Cuttlefish “ravioli” crafted entirely from fish
  • Monkfish with roast chicken and wild garlic
  • Turbot with smoked eel and black truffle

Desserts push boundaries too, including chocolate with caviar, olive oil, and capers, followed by a selection of sweets. A 14-course dinner is available as a supplement, while 8 and 10-course lunch menus start from £80.

As part of a broader refurbishment of The Capital Hotel, the restaurant and adjoining bar will unveil a contemporary new look, blending modernity with the timeless elegance that defines this Knightsbridge institution.
