Cornish Afternoon Tea at the Intercontinental Park Lane

Step into Cornwall’s cosy embrace this winter at the Wellington Lounge in the InterContinental London Park Lane. They’ve just introduced ‘An Ode to Cornwall’ Afternoon Tea, in cahoots with the pastry virtuoso, Martin Chiffers.

Martin, a true Cornish native, has teamed up with this iconic Mayfair hotspot to whip up an afternoon tea that’s a culinary tribute to Cornwall’s vibrant culture and epicurean heritage. They are certainly pulling out all the stops with the best local ingredients.

With over 35 years in the game, Martin’s a seasoned pro in the pastry world. He’s sprinkled his culinary magic at some of the world’s finest hotels in London, Singapore, Korea, and Dubai. A globetrotter in search of sweet inspiration, he spent a whopping twelve years in Asia and the Middle East, soaking up flavours, pastry secrets, and the latest food trends from around the globe. But his roots are firmly planted in Cornwall. He fondly recalls his childhood days helping his mother, who was the Head Chef at The Abbey Hotel in Penzance, in the hotel kitchen after school.

It was at Cornwall College where his pastry passion ignited. There, he dived deep into the chemistry and artistry of pastry-making. With an unquenchable thirst for knowledge and a knack for creating scrumptious delights, he packed his bags and headed to London at the tender age of 18 to kickstart his pastry adventure.

Settling into the plush Wellington Lounge, guests can dive into a smorgasbord of handcrafted goodies and savoury delights. The taste adventure kicks off with Newlyn Crab Casserole with smoked Cornish caviar crostini – a tribute to Martin’s hometown. There’s also the St. Ewe Egg Mayonnaise withwatercress choux, sourced from an award-winning free-range egg producer nestled on the Roseland Peninsula in Cornwall. And remember, it’s jam first and then cream when you’re indulging in the Saffron Raisin Scones. Or is it? 

Other delights include the Duchess of Cornwall Hat with blackberry meringue, Cornish Fairings mousse, and Newlyn blackberry jelly, inspired by Kate Middleton’s iconic headwear. And definitely don’t miss the Cornish Apiaries Honey Cake with crème fraîche – a creation dedicated to Martin’s honey-producing uncle.
